Dried ginger is the finished product of fresh ginger that is harvested in winter to remove the roots, sediment and then sun-dried or low-temperature drying. It is used by traditional Chinese medicine to treat diseases. It is also known as white ginger, Junjiang, and Qiansheng ginger.

As the saying goes, " old ginger is hotter than new " Dried ginger is the dried, old rhizome of ginger for medicinal purposes.
